Quicky Fruitcake

Ingredients

  • 1 cup chopped walnuts
  • 1 cup golden raisins
  • 1 cup chopped dates
  • 1 cup chopped candied fruit
  • 1 cup dark raisins
  • 1 cup flour
  • 1 1/2 teaspoons salt
  • 4 eggs
  • 1 cup brown sugar
  • 1 teaspoon vanilla

Instructions

  1. In a large bowl, combine chopped walnuts, golden raisins, chopped dates, and candied fruit.
  2. Coat the fruit and nut mixture well with 1/4 cup flour.
  3. In a large mixer bowl, combine 3/4 cup flour, eggs, brown sugar, vanilla, salt, and remaining ingredients.
  4. Blend well with the mixer until smooth.
  5. Stir in the fruit and nut mixture, mixing thoroughly.
  6. Spread the batter in a greased 15 x 10 x 1-inch jelly roll pan.
  7. Bake at 325°F for 30 to 35 minutes.
  8. While warm, brush the cake with orange glaze.
  9. Cool the cake and cut into bars.
