Ingredients

  • 1 cottontail
  • 1/2 cup celery
  • 1 bay leaf
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 12 pitted olives
  • fresh parsley
  • 1/4 cup onion

Instructions

  1. Chop the celery and onion.
  2. Place the cleaned rabbit in a baking pan with chopped vegetables and bay leaf.
  3. Roast at 350°F for 45 minutes.
  4. Remove the rabbit and add butter and flour to the drippings in the pan.
  5. Cook until brown.
  6. Add water, salt, olives, and Worcestershire sauce to the pan.
  7. Stir well and return the rabbit to the pan.
  8. Bake for another 45 minutes at 350°F.
  9. Garnish with fresh parsley before serving.
