Ingredients

  • 1/2 cup grated carrots
  • 4 tablespoons raisins
  • 1 teaspoon vanilla flavoring
  • 6 tablespoons flour
  • 2 tablespoons pumpkin spice
  • 8 packets powdered sweetener
  • 1 can canned pumpkin
  • 2 eggs
  • 2/3 cup nonfat milk
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

Instructions

  1. Combine all dry ingredients (flour, pumpkin spice, cinnamon, baking soda, powdered sweetener) in a bowl.
  2. In a separate bowl, mix all wet ingredients (canned pumpkin, eggs, milk, vanilla flavoring).
  3. Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  4. Fold in grated carrots and raisins.
  5. Spray a muffin tin with cooking spray or Pam.
  6. Divide the batter evenly among muffin cups.
  7. Bake at 350°F (175°C) for 15 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool slightly before removing from the tin and serving.
