Ingredients

  • 1 2/3 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/3 cup margarine
  • 1 cup sugar
  • 1 egg
  • 1 cup cooked or canned pumpkin or squash
  • 1/3 cup pineapple or orange juice
  • 1/2 cup raisins

Instructions

  1. Cream together margarine, sugar, and egg.
  2. Add cooked or canned pumpkin or squash to the mixture.
  3. Add the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Add pineapple or orange juice and raisins to the batter.
  5. Pour the batter into a greased loaf pan.
  6. Bake at 350°F (175°C) for about 60 minutes or until a toothpick inserted into the center comes out clean.
