Ingredients

  • 2 c. sifted all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. raisins
  • 2 c. water
  • 1 egg
  • 1/2 c. vegetable shortening
  • 1 c. sugar
  • 1/2 c. chopped walnuts

Instructions

  1. Grease a 13 x 9 x 2-inch baking pan.
  2. Heat oven to 350°.
  3. Boil raisins rapidly in 2 cups water in an uncovered medium-sized saucepan for 10 minutes.
  4. Transfer the raisins to a large bowl and cool to lukewarm.
  5. Stir in the egg, then add the shortening and sugar.
  6. Sift the flour and dry ingredients together and add to the mixture.
  7. Add the raisin mixture and walnuts.
  8. Bake for 25 minutes or until a toothpick comes out clean.
  9. Cool completely and frost with orange icing.
