Ingredients

  • 1 1/4 cups flour
  • 1/2 cup packed brown sugar
  • 1/2 cup finely chopped sliced almonds
  • 1/2 cup butter flavor shortening or shortening
  • 2 (8 oz.) packages cream cheese, softened
  • 2/3 cup sugar
  • 2 eggs
  • 3/4 teaspoon almond extract
  • 1 cup seedless raspberry preserves
  • 1/2 cup flaked coconut

Instructions

  1. Combine flour, brown sugar, and 1/2 cup chopped almonds in a bowl.
  2. Cut in shortening until mixture forms fine crumbs.
  3. Set aside 1/2 cup of crumb mixture for topping.
  4. Press the remaining crumb mixture into a 13 x 9 x 2-inch baking pan.
  5. Bake at 350°F for 12 to 15 minutes or until golden brown.
  6. Beat cream cheese, sugar, eggs, and almond extract until smooth.
  7. Spread the cream cheese mixture over the hot crust.
  8. Return to oven and bake for 15 minutes.
  9. Spread raspberry preserves over the cream cheese layer.
  10. Mix the reserved crumbs, coconut, and sliced almonds.
  11. Sprinkle this mixture over the preserves.
  12. Bake for an additional 15 minutes.
  13. Cool in the pan on a rack.
  14. Chill for 3 hours.
  15. Cut into bars and serve.
