Ingredients

  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1/2 cup jam
  • 2 egg whites

Instructions

  1. Crumble the flour, brown sugar, butter, baking powder, and salt together until well mixed.
  2. Press the crumb mixture into an ungreased baking pan to form the bottom layer.
  3. Spread the raspberry jam evenly over the crust.
  4. Whisk the egg whites until stiff peaks form.
  5. Spread the beaten egg whites over the jam layer.
  6. Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes or until golden brown.
  7. Allow to cool before slicing and serving.
