Ingredients

  • 1 head bibb lettuce
  • 3 cups spinach
  • 2 oranges
  • 3 kiwi fruits
  • 2 red apples
  • 1/2 cup vegetable oil
  • 1/4 cup raspberry vinegar
  • 1/2 teaspoon grated orange rind
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Blend oil, raspberry vinegar, grated orange rind, honey, salt, and pepper together in a screw-top jar; shake vigorously.
  2. Chill the dressing before serving.
  3. Combine torn lettuce, spinach, orange segments, sliced kiwi, and diced red apples in a large salad bowl, reserving a few kiwi slices for garnish.
  4. Just prior to serving, pour the dressing over the salad and toss gently to coat.
  5. Garnish with the reserved kiwi slices.
