Instructions

  1. Combine eggplant, onion, and garlic in a 3-quart casserole. Drizzle with olive oil.
  2. Cover and microwave on High for 5 minutes. Stir in zucchini, bell pepper, and basil.
  3. Re-cover and microwave on High for 5 minutes.
  4. Stir in stewed tomatoes, re-cover and microwave on High for 5 minutes or until vegetables are tender.
  5. Stir in crumbled Feta cheese and black pepper. Serve immediately.
