Ingredients

  • 1 lb ground beef
  • 1 1/2 cups finely chopped onion
  • 1/4 cup soft bread crumbs
  • 3/4 teaspoon onion salt
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 2 (14 1/2 oz) cans Italian style or plain tomatoes, pureed
  • 1 (12 oz) package plain ravioli without sauce
  • 1/4 cup grated Parmesan cheese
  • 1 (14 1/2 oz) can beef broth
  • 1 cup water
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon oregano leaves
  • 1/4 cup chopped parsley

Instructions

  1. Brown ground beef and chopped onion in a large pot.
  2. Combine pureed tomatoes, beef broth, water, bread crumbs, onion salt, minced garlic, olive oil, sugar, dried basil, thyme, and oregano in the pot with the beef and onion. Bring to a boil.
  3. Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
  4. Cook the ravioli in boiling water for 8 to 10 minutes until tender; drain.
  5. Add cooked ravioli and grated Parmesan cheese to the soup and stir.
  6. Serve hot with additional Parmesan cheese if desired.
