Ravioli Soup

Ingredients
- 1 lb ground beef ⓘ
- 1 1/2 cups finely chopped onion
- 1/4 cup soft bread crumbs ⓘ
- 3/4 teaspoon onion salt ⓘ
- 2 teaspoons minced garlic ⓘ
- 1 tablespoon olive oil ⓘ
- 2 (14 1/2 oz) cans Italian style or plain tomatoes, pureed ⓘ
- 1 (12 oz) package plain ravioli without sauce ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1 (14 1/2 oz) can beef broth ⓘ
- 1 cup water ⓘ
- 1/2 teaspoon sugar
- 1/2 teaspoon dried basil ⓘ
- 1/4 teaspoon dried thyme ⓘ
- 1/4 teaspoon oregano leaves ⓘ
- 1/4 cup chopped parsley ⓘ
Instructions
- Brown ground beef and chopped onion in a large pot.
- Combine pureed tomatoes, beef broth, water, bread crumbs, onion salt, minced garlic, olive oil, sugar, dried basil, thyme, and oregano in the pot with the beef and onion. Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
- Cook the ravioli in boiling water for 8 to 10 minutes until tender; drain.
- Add cooked ravioli and grated Parmesan cheese to the soup and stir.
- Serve hot with additional Parmesan cheese if desired.
