Ingredients

  • 1 lb. medium or hot sausage
  • 1 c. chopped celery
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 1/2 c. raw rice
  • 2 envelopes chicken noodle soup mix (dry)
  • 1/2 c. slivered almonds

Instructions

  1. Cook rice and dry soup mix in boiling water for 7 minutes.
  2. Do not drain the mixture.
  3. Cook sausage in a skillet, separating with a fork; drain excess fat.
  4. Add cooked sausage, chopped celery, chopped onion, and chopped green pepper to the rice mixture; mix well.
  5. Pour the mixture into a greased casserole dish.
  6. Top with slivered almonds.
  7. Bake at 350°F for 1 to 1 1/2 hours until heated through and golden on top.
