  • 1 peck ripe tomatoes
  • 4 c. onions, chopped fine
  • 4 c. celery, chopped fine
  • 1 c. salt
  • 1/2 tsp. red pepper
  • 1/2 c. white mustard seed
  • 3 c. white sugar
  • 4 tsp. cinnamon
  • 2 tsp. cloves
  • 3 c. vinegar
  • 1/2 c. horseradish (optional)

Instructions

  1. Peel tomatoes without scalding.
  2. Mix the peeled tomatoes, chopped onions, chopped celery, and salt, and let stand overnight.
  3. In the morning, drain the mixture well.
  4. Add the remaining ingredients and mix on and off all day.
  5. Put the relish into clean pint canning jars.
  6. May be refrigerated before serving.
