Ingredients

  • 2 Tbsp. butter
  • 1 Cup diced onion
  • 1/2 Cup diced celery
  • 1/2 Cup diced leeks
  • 1/4 tsp. chopped garlic
  • 2 Tbsp. flour
  • 1 quart milk
  • 1 Cup clams in juice
  • 1 Cup diced potatoes
  • 1 Tbsp. salt
  • 1/4 tsp. white pepper
  • 1 tsp. dry thyme

Instructions

  1. In a soup pot, melt butter over medium heat.
  2. Add diced onion, diced celery, diced leeks, and chopped garlic.
  3. Saute for 3 minutes, mixing often. Remove from heat and add flour, mixing well.
  4. Add milk and whisk vigorously until smooth.
  5. Drain clams, reserving the juice, and add the juice to the soup.
  6. Slowly bring the mixture to a boil, mixing often.
  7. Reduce heat to a simmer.
  8. Add diced potatoes and seasonings; simmer for 10 minutes.
  9. Add clams and simmer for an additional 5-8 minutes.
  10. Finish with heavy cream and serve.
