Refrigerator Scones
Refrigerator scones are soft, hearty whole wheat treats with a slight tang from buttermilk, perfect for breakfast or snack, suited for quick mornings or casual gatherings.

- Warm buttermilk to 125°F.
- Combine 5 cups of flour, yeast, and sugar in a mixing bowl.
- Add warm buttermilk and mix for 1 minute.
- Turn off the mixer.
- Add salt, baking powder, soda, oil, and eggs.
- Turn on the mixer and add remaining flour one cup at a time until the dough begins to clean the sides of the bowl. The dough should be soft.
- If the dough gets too stiff, drizzle a little warm water over it as you mix to soften.
- The dough can be used immediately or covered and stored in the refrigerator for 2 to 3 weeks.
- Dough will continue to rise in the refrigerator.
- Knead down the dough.
- Roll dough onto a lightly floured surface and cut into shapes.
- Let the shaped dough rise.
- Cook on a griddle at 375°F, turning when browned.
