Refrigerator scones are soft, hearty whole wheat treats with a slight tang from buttermilk, perfect for breakfast or snack, suited for quick mornings or casual gatherings.

Ingredients

  • 1 qt. buttermilk
  • 8 to 9 cups whole wheat flour
  • 5 cups whole wheat flour
  • 3 to 4 cups unbleached flour
  • 2 Tbsp. dry yeast
  • 2 Tbsp. sugar or honey
  • 1 1/2 tsp. salt
  • 1 Tbsp. baking powder
  • 1/2 tsp. soda

Instructions

  1. Warm buttermilk to 125°F.
  2. Combine 5 cups of flour, yeast, and sugar in a mixing bowl.
  3. Add warm buttermilk and mix for 1 minute.
  4. Turn off the mixer.
  5. Add salt, baking powder, soda, oil, and eggs.
  6. Turn on the mixer and add remaining flour one cup at a time until the dough begins to clean the sides of the bowl. The dough should be soft.
  7. If the dough gets too stiff, drizzle a little warm water over it as you mix to soften.
  8. The dough can be used immediately or covered and stored in the refrigerator for 2 to 3 weeks.
  9. Dough will continue to rise in the refrigerator.
  10. Knead down the dough.
  11. Roll dough onto a lightly floured surface and cut into shapes.
  12. Let the shaped dough rise.
  13. Cook on a griddle at 375°F, turning when browned.
