Ingredients

  • 1/2 cup chopped onion
  • 1/4 pound sliced Swiss cheese
  • 1/4 cup butter
  • 3/4 cup sour cream
  • 1 (8 oz.) can sauerkraut, well drained
  • 1 tablespoon sweet pickle relish
  • 1/2 cup Dijon mustard
  • 1 teaspoon caraway seed
  • 8 sheets phyllo dough
  • 1/2 pound thinly sliced corned beef

Instructions

  1. In a saucepan over medium heat, cook chopped onion in 1 tablespoon butter until tender.
  2. Stir in well-drained sauerkraut, 1/2 cup Dijon mustard, and caraway seed.
  3. Melt the remaining butter.
  4. Stack the phyllo dough sheets, brushing butter in between each layer.
  5. Layer slices of corned beef, cheese, and sauerkraut mixture on the phyllo, leaving 1 inch of space from the edges.
  6. Roll up the layered sheet from the long edge in jelly-roll fashion, tucking in the ends and brushing seams with butter.
  7. Place the roll seam side down on a greased baking sheet.
  8. Cut slits on top of the roll in 12 even sections about 1/2-inch deep.
  9. Bake at 375°F (190°C) for 30 to 35 minutes or until golden brown.
