- In a saucepan over medium heat, cook chopped onion in 1 tablespoon butter until tender.
- Stir in well-drained sauerkraut, 1/2 cup Dijon mustard, and caraway seed.
- Melt the remaining butter.
- Stack the phyllo dough sheets, brushing butter in between each layer.
- Layer slices of corned beef, cheese, and sauerkraut mixture on the phyllo, leaving 1 inch of space from the edges.
- Roll up the layered sheet from the long edge in jelly-roll fashion, tucking in the ends and brushing seams with butter.
- Place the roll seam side down on a greased baking sheet.
- Cut slits on top of the roll in 12 even sections about 1/2-inch deep.
- Bake at 375°F (190°C) for 30 to 35 minutes or until golden brown.
