Ingredients

  • 1 1/4 cups brown sugar
  • 2 teaspoons vanilla
  • 1 1/2 cups diced rhubarb
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup oil
  • 1 egg
  • 1 cup buttermilk
  • 1/2 cup chopped nuts
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Mix brown sugar, oil, egg, vanilla, and buttermilk in a large bowl.
  2. Stir in diced rhubarb, chopped nuts, and vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the rhubarb mixture and stir until just combined.
  5. Spoon the batter into a greased or lined muffin pan.
  6. Bake at 375°F (190°C) for 20 minutes or until a toothpick inserted into the center comes out clean.
