Ingredients

  • 1 can beef broth
  • 1 can beef Consomm
  • 1 cup white or brown rice
  • 1 can (4 oz.) mushrooms
  • 1 cup chopped onion
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • salt and pepper to taste
  • 1 stick butter or margarine

Instructions

  1. Place all ingredients except butter in a casserole dish.
  2. Mix well and arrange slices of butter over the top.
  3. Bake covered at 350°F for 1 hour.
