Ingredients

  • 1 lb. ricotta
  • 2 c. oil
  • 3 eggs
  • 5 Tbsp. sugar
  • 4 tsp. baking powder
  • 2 c. flour

Instructions

  1. Mix together eggs, ricotta, sugar, baking powder, and flour. Cover and let stand for 1 hour.
  2. Pour oil into a saucepan and heat until hot.
  3. Drop dough by the tablespoonfuls into the hot oil.
  4. Puffs will turn themselves when browned.
  5. Remove from oil and place on paper towels to drain.
  6. Sprinkle with confectioners sugar.
  7. Eat them hot.
