Juicy roast beef cooked with flavorful veggies and a smoky barbecue glaze, perfect for hearty family dinners and gatherings that appreciate bold flavors and tender meat.

Ingredients

  • 3 lb beef roast
  • Woodies barbecue sauce
  • meat tenderizer
  • 1 large onion
  • salt
  • 3 to 4 medium potatoes
  • 2 to 3 carrots
  • garlic salt

Instructions

  1. Peel and slice the potatoes, carrots, and onion.
  2. Rub both sides of the beef roast with meat tenderizer and let stand until 1 hour before cooking.
  3. Marinate the roast with Woodies barbecue sauce and let stand for 30 minutes.
  4. Light char coals and brown the roast slightly over the flames.
  5. Place the browned roast in a Dutch oven on top of the sliced vegetables, seasoning with salt and pepper to taste.
  6. Brush garlic salt on the roast before covering.
  7. Bake in a 350°F oven for 2 1/2 to 3 hours until cooked through.
