- Peel and slice the potatoes, carrots, and onion.
- Rub both sides of the beef roast with meat tenderizer and let stand until 1 hour before cooking.
- Marinate the roast with Woodies barbecue sauce and let stand for 30 minutes.
- Light char coals and brown the roast slightly over the flames.
- Place the browned roast in a Dutch oven on top of the sliced vegetables, seasoning with salt and pepper to taste.
- Brush garlic salt on the roast before covering.
- Bake in a 350°F oven for 2 1/2 to 3 hours until cooked through.
