Ingredients

  • 3 onions, chopped
  • 2 Tbsp. butter
  • 1 lb. ground beef
  • 1 clove garlic, minced
  • 3 c. beef stock
  • 2 (28 oz.) cans tomatoes
  • 1 c. potatoes, diced
  • 1 c. celery, diced
  • 1 c. green beans, diced
  • 1 c. carrots, diced
  • 1 c. dry red wine
  • 2 Tbsp. parsley, chopped
  • 1/2 tsp. basil
  • 1/4 tsp. thyme
  • salt and pepper to taste

Instructions

  1. In a large kettle, sauté onions in butter until tender.
  2. Stir in ground beef and minced garlic, and sauté until browned.
  3. Add beef stock, tomatoes, potatoes, celery, green beans, carrots, red wine, parsley, basil, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
