Ingredients

  • 3 1/2 lb. chicken
  • 2 Tbsp. butter
  • 1 onion, chopped fine
  • 1/2 lb. fresh mushrooms, cleaned and diced
  • 1 tsp. chopped fresh parsley
  • 1/2 tsp. tarragon
  • 1 1/2 c. beef stock
  • 1 Tbsp. tomato paste
  • 1 Tbsp. cornstarch
  • 3 Tbsp. cold water
  • juice of 1 lemon
  • salt

Instructions

  1. Preheat oven to 425°.
  2. Place chicken in pan.
  3. Season with salt and pepper.
  4. Brush with lemon and butter.
  5. Roast for 30 minutes in the oven.
  6. Reduce heat to 350°.
  7. Cook for 1 1/4 hours more.
  8. Remove cooked chicken from pan and set aside.
  9. Discard 2/3 fat from pan. Place pan on stove over high heat.
  10. Add onion and cook for 3 minutes, stirring often.
  11. Add mushrooms and seasonings. Mix well.
  12. Cook for 4 minutes over high heat.
  13. Mix beef stock and tomato paste. Cook for 3 minutes more.
  14. Dissolve cornstarch in cold water.
  15. Stir into mushroom sauce and cook for 1 minute.
  16. Serve roasted chicken with gravy and roasted potatoes.
