Roast Persian Lamb

Ingredients

  • 3 to 4 lb. leg of lamb
  • 6 cloves garlic, cut in half lengthways
  • 4 oz. butter
  • 2 Tbsp. tomato paste
  • 1 Tbsp. fresh chopped mint
  • 1 tsp. turmeric
  • salt and pepper
  • 3 small onions, quarter
  • 3 to 4 carrots, sliced

Instructions

  1. Preheat oven to 450°.
  2. Make 12 insertions into the meat using a sharp knife and place one piece of garlic into each one.
  3. Put the lamb in a roasting pan.
