Roasted Corn Salad

Ingredients

  • 2 pkg. frozen corn, thawed and drained
  • 4 scallions, sliced thin
  • 1/2 c. chopped fresh cilantro
  • 3 Tbsp. cider vinegar
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1 red bell pepper, seeded and chopped
  • 4 green onions, sliced
  • 1 Tbsp. honey
  • 1 tsp. Dijon mustard

Instructions

  1. Preheat oven to 425°F.
  2. Spray a baking pan with nonstick spray and spread the corn evenly on the pan.
  3. Roast the corn for 20 minutes, stirring every 5 to 7 minutes.
  4. Allow the corn to cool completely.
  5. Combine chopped red bell pepper, sliced scallions, sliced green onions, chopped cilantro, cider vinegar, honey, olive oil, Dijon mustard, and salt in a large bowl.
  6. Stir in the cooled roasted corn.
  7. Cover and chill before serving.
