Tips & Substitutions
For a more robust flavor, let the hens marinate overnight. If you don't have fresh herbs, dried herbs can be used, but reduce the quantity. To cut down on prep time, consider using pre-cut Cornish hens. Always ensure the internal temperature reaches 165°F for safety. Pair with a side of Pineapple-Lemon Salad for a refreshing contrast.
Serving Suggestions
Serve the roasted hens with a side of roasted vegetables or creamy mashed potatoes for a delightful meal. A fresh salad also complements the dish well. For a unique twist, try pairing with Onion Cheese Biscuit Loaf. Garnish with additional rosemary sprigs for a beautiful presentation.
Storage & Reheating
Leftover roasted Cornish hens can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place in a preheated oven at 350°F until warmed through, about 15-20 minutes. Alternatively, you can microwave them on medium power in short intervals to avoid drying out the meat.

Frequently Asked Questions
Can I use chicken instead of Cornish hens?
Yes, you can substitute with a whole chicken, but cooking times will vary. A larger chicken may require longer roasting to ensure even cooking. Adjust the marinade quantities accordingly, as a whole chicken will need more marinade to flavor properly.
What is the best way to ensure the hens are crispy?
For crispy skin, make sure to pat the hens dry before marinating. Roast them uncovered to allow the skin to crisp up. You can also broil them for the last few minutes of cooking to enhance the crispiness. Basting with melted butter can help achieve that golden finish.
Can I prepare the marinade in advance?
Absolutely! You can prepare the marinade a day ahead and store it in the refrigerator. Just give it a good stir before using. This can save time on the day you plan to cook and allows the flavors to meld beautifully.
