Ingredients

  • 1 onion, chopped
  • 1 stick butter or margarine
  • 3-4 potatoes, diced
  • 1/2 lb. American cheese
  • 4 cups milk
  • 1 chicken bouillon cube
  • water
  • salt

Instructions

  1. Melt butter in a large pan over medium heat.
  2. Add chopped onion and diced potatoes; cook until onions are translucent.
  3. Add water with dissolved chicken bouillon cube to just cover the potatoes and onions.
  4. Bring to a boil, then reduce heat and cook until potatoes are tender, about 15-20 minutes.
  5. Stir in milk, American cheese, salt, and pepper.
  6. Cook on low heat until the cheese melts and the soup is heated through.
  7. Serve warm.
