Instructions

  1. Wash the dried beans and place in a soup pot with water to cover.
  2. Allow to soak overnight or several hours.
  3. Pour off the soaking water and cover the beans again with fresh water.
  4. Cook the beans until they are almost tender.
  5. Add ham flavor packet, Essence seasoning, chopped onion, chopped bell pepper, smoked sausage, Rotel, and diced tomatoes.
  6. Cook over medium heat until onions and bell pepper are tender.
  7. Add butter and Tabasco sauce.
  8. Taste and add salt and black pepper as needed.
