Ingredients

  • 4 Tbsp. butter or margarine
  • 3 eggs
  • 1 c. flour
  • 1 c. milk
  • 1 tsp. baking powder
  • 1 (16 oz.) pkg. grated Cheddar cheese
  • 2 pkgs. frozen chopped spinach, thawed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Put butter in a baking dish and melt it in the oven, then remove.
  3. In a large bowl, beat eggs well.
  4. Add flour, milk, salt, and baking powder and mix well.
  5. Add grated Cheddar cheese, chopped spinach, and chopped onion; mix well.
  6. Spoon the mixture into the baking dish and level off.
  7. Sprinkle with salt and pepper.
  8. Bake at 350°F (175°C) for 35 minutes.
  9. Let cool for 45 minutes.
  10. Cut into bite-sized pieces and serve.
