Ingredients

  • 1/2 cup chopped mushrooms
  • dash of cayenne pepper
  • 6 to 7 chicken breasts
  • 1 1/4 cups shredded Cheddar cheese
  • all-purpose flour
  • 2 tablespoons butter
  • 1/2 cup light cream
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 2 beaten eggs

Instructions

  1. Cook mushrooms in butter for 5 minutes.
  2. Blend in flour, then stir in light cream, salt, and cayenne pepper.
  3. Cook until the mixture thickens.
  4. Stir in shredded Cheddar cheese and cook until cheese melts.
  5. Cool the filling for at least one hour before using.
  6. Cut chicken breasts to create pockets and fill with the cooled mushroom and cheese mixture.
  7. Roll the filled chicken breasts and secure if necessary.
  8. Dip each roll in beaten eggs, then coat with flour.
  9. Cook the chicken rolls as desired, such as baking or frying, until cooked through and golden.
