Ingredients

  • 8 oz. rosette or other macaroni
  • 1/2 cup finely chopped celery
  • 1/3 cup finely chopped green pepper
  • 1/3 cup sweet pickle relish
  • 1/4 cup green onions, sliced
  • 2 Tbsp. pimiento, chopped
  • 1 tsp. prepared mustard
  • 1/4 tsp. salt
  • 1/4 tsp. white pepper
  • 2/3 cup mayonnaise or salad dressing
  • 2 hard-boiled eggs, chopped
  • paprika

Instructions

  1. Cook macaroni according to package directions.
  2. Drain and cool.
  3. Add chopped celery, green pepper, relish, green onions, chopped pimiento, mustard, salt, and white pepper, mixing well.
  4. Fold in mayonnaise or salad dressing, mixing until evenly coated.
  5. Gently fold in chopped hard-boiled eggs.
  6. Refrigerate until serving.
  7. Garnish with egg wedges, sprinkling with chopped parsley and paprika.
