Rotini Pasta Salad

Ingredients

  • 1 red onion or bunch green onions
  • 1/2 lb mushrooms
  • 1 bunch broccoli
  • bell peppers (red or green)
  • pepperoni slices
  • Parmesan cheese
  • red wine vinegar and oil salad dressing
  • Ranch Italian salad dressing
  • pepperoncini salad peppers and juice
  • rotini pasta

Instructions

  1. Cook the rotini pasta until tender.
  2. Drain the pasta and rinse with cold water.
  3. Cut up the vegetables including red onion or green onions, mushrooms, broccoli, and bell peppers.
  4. Mix the cooked pasta with the chopped vegetables and pepperoni slices.
  5. Pour red wine vinegar and oil salad dressing, Ranch Italian salad dressing, and pepperoncini salad peppers and juice over the mixture a little at a time.
  6. Taste and add more liquids until you like the flavor.
  7. Remember that as the salad marinates, it will get stronger in taste.
  8. Sprinkle liberally with Parmesan cheese and refrigerate for at least 4 hours before serving.
