Ingredients
- 2 Tbsp. butter ⓘ
- 1 1/2 lb. ground lamb or cooked neck slices ⓘ
- 1 c. chopped onion ⓘ
- 1 c. chopped celery ⓘ
- 2 bay leaves ⓘ
- 1/2 c. barley ⓘ
- 1 1/2 qt. water ⓘ
- 1/4 c. lemon juice ⓘ
- 1 1/2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 1/4 c. chopped parsley ⓘ
- chopped carrots (optional) ⓘ
- chopped potatoes (optional) ⓘ
- peas (optional) ⓘ
Instructions
- Melt the butter in a large pot over medium heat.
- Add ground lamb or cooked neck slices, chopped onion, and chopped celery.
- Cook until the lamb is light brown, stirring occasionally.
- Pour off any excess fat.
- Add chopped carrots, peas, chopped potatoes (if using), bay leaves, barley, water, lemon juice, salt, and pepper to the pot.
- Cover and simmer over low heat (275°F) for about 45 minutes or until the vegetables are tender.
- Stir in chopped parsley and mix well.
- Serve while hot.
