Mediterranean Vegetable Casserole

Ingredients
- 1/4 cup olive oil ⓘ
- 2 medium eggplant, sliced 1/4-inch ⓘ
- 6 zucchini, sliced 1/4-inch ⓘ
- 2 green peppers, sliced ⓘ
- 2 large onions, sliced
- 6 fresh tomatoes, sliced
- 1 to 2 teaspoons oregano ⓘ
- salt and pepper to taste ⓘ
- 1 jar marinara sauce ⓘ
- 16 Italian sausages, cooked and sliced ⓘ
- sliced mozzarella cheese ⓘ
Instructions
- Pour olive oil into a 13 x 9-inch (or larger) pan.
- Layer the sliced eggplant, zucchini, onions, peppers, and tomatoes in the prepared pan, ending with eggplant slices.
- Season each layer with salt, pepper, and oregano.
- Repeat the layering until all vegetables are used.
- Top the layered vegetables with cooked, sliced Italian sausages.
- Pour marinara sauce evenly over the top.
- Cover the casserole and bake at 350°F for one hour.
- Drain off some of the juices from the casserole.
- Top with sliced mozzarella and provolone cheeses.
- Return to the oven and bake until the cheeses are melted.
