Ingredients

  • 1/4 cup olive oil
  • 2 medium eggplant, sliced 1/4-inch
  • 6 zucchini, sliced 1/4-inch
  • 2 green peppers, sliced
  • 2 large onions, sliced
  • 6 fresh tomatoes, sliced
  • 1 to 2 teaspoons oregano
  • salt and pepper to taste
  • 1 jar marinara sauce
  • 16 Italian sausages, cooked and sliced
  • sliced mozzarella cheese

Instructions

  1. Pour olive oil into a 13 x 9-inch (or larger) pan.
  2. Layer the sliced eggplant, zucchini, onions, peppers, and tomatoes in the prepared pan, ending with eggplant slices.
  3. Season each layer with salt, pepper, and oregano.
  4. Repeat the layering until all vegetables are used.
  5. Top the layered vegetables with cooked, sliced Italian sausages.
  6. Pour marinara sauce evenly over the top.
  7. Cover the casserole and bake at 350°F for one hour.
  8. Drain off some of the juices from the casserole.
  9. Top with sliced mozzarella and provolone cheeses.
  10. Return to the oven and bake until the cheeses are melted.
