Ingredients

  • 1 cup chopped pecans
  • 1 package yellow cake mix (2-layer size, no pudding)
  • 1 package instant vanilla pudding mix (3 3/4 oz.)
  • 4 eggs
  • 3/4 cup cold water
  • 1/4 cup cooking oil
  • 1/4 cup dark rum
  • 1 cup sugar
  • 1/2 cup butter or margarine
  • 1/2 cup water

Instructions

  1. Sprinkle the chopped pecans in the bottom of a greased and floured 10-inch fluted tube pan.
  2. In a large mixer bowl, combine the yellow cake mix, vanilla pudding mix, eggs, 3/4 cup water, cooking oil, and 1/4 cup rum.
  3. Blend well until smooth.
  4. Beat at medium speed for 2 minutes.
  5. Pour the batter into the prepared pan over the pecans.
  6. Bake in a 325°F oven for 50 to 55 minutes or until the cake tests done.
  7. Cool in the pan for 15 minutes.
  8. Invert the cake onto a serving plate.
  9. Prick the cake with a long-tined fork to allow flavors to seep in.
