Savory Russian cabbage rolls feature tender cabbage leaves filled with seasoned ground beef and rice, simmered in a tangy tomato and lemon sauce, perfect for comforting family meals.

Ingredients

  • 1 large cabbage
  • 1 lb. lean ground beef
  • 1 large onion, grated
  • 1 large egg
  • 1/2 c. water
  • salt and pepper to taste
  • 16 oz. tomato puree
  • 1 lemon, sliced
  • juice of 1 lemon
  • 1/2 c. raisins

Instructions

  1. Boil cabbage in water until limp; cool and carefully separate the leaves.
  2. In a bowl, combine ground beef, grated onion, egg, raisins, salt, and pepper to prepare the filling.
  3. Place a spoonful of the filling onto each cabbage leaf and roll up tightly.
  4. In a pot, combine tomato puree, water, lemon juice, and lemon slices to make the sauce.
  5. Place the cabbage rolls in the sauce, cover, and simmer over low heat for about 60 minutes.
  6. Serve hot, garnished with additional lemon slices if desired.
