Ingredients

  • 1 cup rice
  • 1 cup thinly sliced celery
  • 1/2 cup sliced green onions with tops
  • 1/2 cup diced sweet pickle
  • 1 cup mayonnaise
  • 1/4 cup juice from pickles
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (16 oz.) can salmon, drained
  • 1 (10 oz.) package peas, thawed
  • endive
  • 2 hard-boiled eggs, sliced

Instructions

  1. Prepare rice according to package directions and let it cool if necessary.
  2. Add thinly sliced celery, green onions with tops, and diced sweet pickle to the cooked rice.
  3. Drain the can of salmon and break it into chunks.
  4. Gently stir the salmon and thawed peas into the rice mixture.
  5. Mix mayonnaise with pickle juice, salt, and pepper, then fold into the salad mixture.
  6. Chill the salad for 3 to 4 hours or overnight to allow flavors to meld.
  7. Serve on endive leaves and garnish with sliced hard-boiled eggs.
