Safarancho is a hearty one-pot dish combining tender pork chops with savory rice, vegetables, and a flavorful tomato-based sauce, perfect for family dinners and comfort food lovers.

Ingredients

  • 1 Tbsp. oil
  • 4 loin pork chops, cut in half
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 c. uncooked rice
  • 1/3 c. catsup
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 1/2 c. boiling water or broth

Instructions

  1. Pour oil into the bottom of a skillet and arrange the pork chops on it.
  2. Sprinkle the rice over the meat.
  3. Add the remaining ingredients to boiling water or broth and pour over all.
  4. Cover and simmer for 45 minutes.
  5. Allow to stand for 15 minutes before serving.
