Ingredients

  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 2 tablespoons butter or margarine
  • 1/2 cup chopped black olives (optional)
  • 1 (1 lb) can red salmon
  • 1 (10 1/2 oz) can condensed cream of chicken soup
  • 2 cups biscuit mix
  • 2/3 cup milk
  • 1 egg
  • 1 tablespoon water
  • Piquant Sauce (recipe follows)

Instructions

  1. Saute chopped celery, green pepper, and onion in butter until tender; add chopped black olives if desired.
  2. Drain the canned salmon and reserve 1/4 cup of the liquid from the salmon.
  3. Mix the salmon with 1/4 cup of condensed cream of chicken soup and set aside.
  4. Prepare the biscuit dough by mixing biscuit mix, milk, and egg until combined.
  5. Roll out the biscuit dough and spread the salmon mixture evenly over it.
  6. Roll up the dough into a log and place it in a greased baking dish.
  7. Mix the remaining chicken soup with water and pour over the rolled dough.
  8. Bake in a preheated oven at 375°F (190°C) for approximately 25 minutes until golden brown.
