Ingredients

  • 2 1/4 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 2 eggs
  • 1/2 cup milk
  • 1 can salmon or mackerel
  • 1 small onion
  • 2 tablespoons salmon juice
  • 1/3 pound cheese, thinly sliced

Instructions

  1. Sift together flour, baking powder, and salt.
  2. Cut in shortening until the mixture resembles coarse crumbs.
  3. Combine eggs and milk; beat well.
  4. Add the egg mixture to the dry ingredients and mix only until the flour is moistened.
  5. Roll out two-thirds of the dough to fit a 9-inch pie pan.
  6. Drain the salmon or mackerel; flake into a bowl, removing skin and bones.
  7. Add onion and salmon juice to the fish and mix well.
  8. Turn the fish mixture into the prepared pie pan.
  9. Cover the filling with sliced cheese.
  10. Roll out the remaining dough and place on top of the cheese.
  11. Bake at 375°F (190°C) for 20 to 30 minutes until golden brown.
