- Sift together flour, baking powder, and salt.
- Cut in shortening until the mixture resembles coarse crumbs.
- Combine eggs and milk; beat well.
- Add the egg mixture to the dry ingredients and mix only until the flour is moistened.
- Roll out two-thirds of the dough to fit a 9-inch pie pan.
- Drain the salmon or mackerel; flake into a bowl, removing skin and bones.
- Add onion and salmon juice to the fish and mix well.
- Turn the fish mixture into the prepared pie pan.
- Cover the filling with sliced cheese.
- Roll out the remaining dough and place on top of the cheese.
- Bake at 375°F (190°C) for 20 to 30 minutes until golden brown.
