Ingredients

  • 1 lb. can salmon
  • 2/3 cup evaporated milk or half and half
  • 2 cups Bisquick mix
  • dash of pepper
  • 1 egg, lightly beaten
  • 1 Tbsp. lemon juice
  • 2 Tbsp. minced green onion
  • 2 Tbsp. minced green pepper
  • 2 Tbsp. chopped parsley
  • 1/2 cup minced celery
  • 1/2 tsp. dill weed
  • oil for frying

Instructions

  1. Drain the salmon and measure 2/3 cup of the liquid, adding evaporated milk or half and half to reach this amount.
  2. Combine Bisquick mix, pepper, egg, the prepared liquid, and lemon juice in a mixing bowl.
  3. Flake the salmon and stir into the mixture.
  4. Add minced green onion, green pepper, chopped parsley, minced celery, and dill weed; mix well.
  5. Heat about 1 inch of oil in a skillet to 365°F.
  6. Drop teaspoon-sized portions of the salmon mixture into the hot oil and fry for 2 to 3 minutes until golden brown.
  7. Drain the fried cakes on absorbent paper before serving.
