Salmorejo is a creamy, chilled Spanish tomato and bread soup, rich in garlic and olive oil, perfect for hot days and served with chopped hard-boiled eggs.

Ingredients

  • 1/2 French bread
  • 1 clove garlic
  • 1 medium cucumber
  • 1 small red pepper
  • 1 can natural tomatoes (2 lb.)
  • 8 Tbsp. virgin olive oil
  • 1 Tbsp. vinegar
  • 1/2 tsp. salt
  • 3 eggs

Instructions

  1. Boil the eggs and set them aside to cool.
  2. Soak the bread in water for half an hour, then squeeze out the excess water.
  3. Grind the tomatoes, cucumber, red pepper, garlic, olive oil, vinegar, and salt together until smooth.
  4. Mix the ground ingredients with the squeezed bread until well combined.
  5. Serve the salmorejo cold, garnished with chopped hard-boiled eggs.
