A flavorful, chunky or smooth homemade salsa with fresh tomatoes, onions, peppers, and cilantro, perfect for preserving and enjoying with Mexican-inspired dishes or as a dip.

Ingredients

  • 24 medium tomatoes
  • 5 large onions, chopped
  • 4 to 6 jalapeno peppers, chopped finely
  • 4 to 6 green peppers, chopped fine
  • 1 large bunch cilantro leaves, chopped
  • 3 cloves garlic, minced
  • 3 Tbsp. brown sugar
  • 2 Tbsp. sugar
  • 2 Tbsp. salt
  • 3 cans tomato paste

Instructions

  1. Cut tomatoes into chunks for chunky salsa or place them in a blender for smooth salsa.
  2. Mix all ingredients together in a large pot.
  3. Cook the mixture until it reaches the desired thickness.
  4. Pack the salsa into pint bottles.
  5. Pressure cook the bottled salsa at 10 pounds of pressure for 20 minutes.
