Ingredients

  • 6 to 8 cans chopped clams
  • 2 bottles clam juice
  • 2 cubes butter
  • 1 can corn
  • 1 bunch carrots
  • 2 potatoes
  • 2 to 3 stalks celery
  • 1/2 onion
  • 6 slices bacon
  • 1 pint whipped cream
  • 1 quart half and half cream
  • 1/2 cup flour
  • 4 to 5 tablespoons cornstarch

Instructions

  1. Fry bacon until crisp and set aside.
  2. Use bacon oil to cook carrots, onion, and celery.
  3. Remove vegetables from oil and set aside.
  4. Cook potatoes until tender and set aside.
  5. Melt butter in a large pot.
  6. Add flour and brown to make a roux.
  7. Slowly add clam juice, stirring constantly.
  8. Add half and half and whipped cream to the mixture.
  9. Add canned clams with their juice.
  10. Stir in corn, carrots, celery, potatoes, and onion.
  11. Bring to a boil and thicken with cornstarch mixed with water.
  12. Add cooked bacon and butter.
  13. Simmer gently, ensuring not to burn or overcook the potatoes.
  14. Serve hot and enjoy!
