Ingredients

  • 1 cup cattail flowers or pollen
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 4 tablespoons sunflower or cooking oil
  • 4 tablespoons honey
  • 1 1/2 cups milk
  • 2 tablespoons toasted sunflower seeds

Instructions

  1. Mix cattail flowers or pollen, whole wheat flour, baking powder, and salt in a bowl.
  2. Beat eggs in a separate bowl; add oil, honey, and milk.
  3. Stir the wet ingredients into the dry ingredients just enough to combine.
  4. Fill greased muffin pans two-thirds full.
  5. Bake at 400°F (200°C) for 20 minutes or until done.
