Ingredients

  • 7 cups sliced cucumbers (1/4-inch thick)
  • 2 cups sugar
  • 1 cup white vinegar
  • 1 large onion, chopped finely
  • 1 large sweet pepper (green or red), chopped
  • 1 teaspoon celery seed
  • 1 1/2 tablespoons salt

Instructions

  1. Mix sugar, vinegar, chopped onion, chopped sweet pepper, celery seed, and salt well in a large bowl.
  2. Pour the mixture over sliced cucumbers in a large container.
  3. Refrigerate for 5 days, stirring twice daily to distribute flavors.
  4. After 5 days, transfer the pickles to small containers or freezer bags and freeze.
