Ingredients

  • 4 eggs
  • 1/4 tsp. parsley flakes
  • 1/4 tsp. dried oregano leaves
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 c. chopped green pepper
  • 2 green onions, chopped
  • 1 small tomato, chopped
  • 1/2 c. shredded cheese

Instructions

  1. In a medium bowl, blend eggs and spices.
  2. Stir in green pepper, green onions, and tomato.
  3. Microwave at High for 3 1/2 to 5 minutes, or until the eggs are softly set, stirring 2 to 3 times during cooking.
  4. Sprinkle with shredded cheese.
  5. Cover and let stand for 1 to 2 minutes or until the cheese melts.
  6. Serve immediately.
