Instructions

  1. In a food processor, mince the parsley leaves and small onion by turning the machine on and off. Reserve them.
  2. Mix the pork and pork fat in a bowl and divide the mixture into three batches.
  3. Put one batch in the work bowl and chop by turning the machine on and off until it reaches the desired texture.
  4. Transfer the chopped mixture to a large bowl. Repeat with the remaining batches.
  5. Add salt, ground cloves, nutmeg, cinnamon, dried oregano, dried basil, freshly ground pepper, water, and liquid smoke to the mixture.
  6. Gradually add flour, from 1/4 to 1/2 cup, until the mixture holds together well.
  7. Form the mixture into patties and cook as desired.
