Sausage Squash Casserole

Ingredients

  • 1 stick margarine
  • 1/4 lb soda crackers
  • 4 small yellow squash
  • 1/4 lb pork sausage
  • 1 medium bell pepper
  • 1 medium onion
  • 2 cans Ro-Tel
  • 8 oz grated Cheddar cheese
  • salt and pepper to taste

Instructions

  1. Spray a baking dish with Pam or non-stick spray.
  2. Layer the ingredients in the dish in the following order: sliced yellow squash, browned and crumbled pork sausage, chopped bell pepper, chopped onion, and crumbled soda crackers, repeating if necessary.
  3. Pour melted margarine evenly over the layered ingredients.
  4. Pour two cans of Ro-Tel tomatoes over the layers.
  5. Bake in a preheated oven at 350°F (175°C) for 45 minutes.
  6. Remove from oven and immediately top with grated Cheddar cheese.
  7. Allow to sit for a few minutes before serving to let the cheese melt and flavors meld.
