Ingredients

  • 1 (15 1/2 oz.) can salmon
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 minced clove garlic
  • 1 (16 oz.) can tomatoes
  • 1 (8 oz.) can whole kernel corn
  • 1/2 teaspoon salt
  • pepper to taste
  • 1/4 teaspoon thyme

Instructions

  1. Drain salmon; remove skin and bones.
  2. Saute chopped onion, chopped green pepper, and minced garlic in olive oil until tender.
  3. Add chicken broth, canned tomatoes, whole kernel corn, salt, pepper, and thyme.
  4. Simmer the mixture for 15 minutes.
