Ingredients

  • 2 packages chopped frozen spinach, cooked and drained
  • 1 large onion, chopped fine
  • 4 eggs, beaten
  • 3/4 cup butter
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon thyme
  • 1/2 cup Parmesan cheese
  • 2 cups stuffing mix

Instructions

  1. Mix all ingredients in a large bowl.
  2. Chill the mixture for 30 minutes.
  3. Preheat oven to 350°F (175°C).
  4. Grease cookie sheets or line with parchment paper.
  5. Roll the mixture into small balls using a teaspoon or tablespoon.
  6. Bake for 15 minutes until golden.
