Ingredients

  • 4 (5 oz.) loin veal chops
  • 1/2 tsp. dried Italian seasoning
  • 1/8 tsp. pepper
  • vegetable cooking spray
  • 2 tsp. vegetable oil
  • 1/4 cup water
  • 1/4 cup dry white wine
  • 1/2 tsp. chicken bouillon granules
  • 1 clove garlic
  • 1 small onion
  • 2 cups fresh sliced mushrooms
  • 1/2 tsp. crushed rosemary
  • 1 tbsp. fresh chopped parsley

Instructions

  1. Sprinkle veal chops with Italian seasoning and pepper.
  2. Coat a large skillet with vegetable cooking spray.
  3. Add vegetable oil and heat over medium high heat until hot.
  4. Add veal chops to the skillet.
  5. Cook 3 to 4 minutes on each side until browned.
  6. Drain veal on paper towels.
  7. Wipe the skillet dry.
  8. Add water, chicken bouillon granules, white wine, and crushed garlic to the skillet. Bring to a boil, stirring to dissolve the bouillon.
  9. Reduce heat and simmer for 2 minutes.
  10. Place sliced onion in the bottom of a 12 x 8 x 2-inch baking dish; top with veal chops.
  11. Pour the wine mixture over the veal.
  12. Sprinkle mushrooms and crushed rosemary over the top.
  13. Cover and bake for 25 minutes until tender.
  14. Sprinkle with chopped parsley before serving.
